I love mushrooms, the more the better. Mixed with a simple stir fry they make such a difference. The roasted portobello mushrooms in this recipe just add another level of flavour and are a perfect match with the steak and the sesame oil. Add whatever veg you prefer in a stir fry and if you only have one type of mushroom just go with that, it will still taste nice.
- 350g rump steak.
- 1 chilli (small) finely chopped.
- 1 to 2 Tbsp Groundnut oil.
- 1 Inch fresh grated ginger.
- 1 garlic clove minced.
- 1 tbsp corn starch.
- 8-10 portobello mushrooms (small ones).
- 8-10 small English button mushrooms (cut some in half leave some whole).
- 150g mix of king oyster / oniki and samejii mushrooms or any other .
- 1 medium carrot (cut into thin strips).
- 15 sugar snap peas (cut some in half leave some whole).
- 6 baby corn cut in half.
- 3 tbsp light soy sauce.
- 1 tbsp rice wine vinegar.
- 2 tsp Sesame Oil
- 1 tbsp sesame seeds
- Dry wash the Portobello mushrooms and trim stalks, put them in a baking dish with a little bit of oil and crumble a little bit of sea salt on each mushroom. Bake for 15-20 minutes at 180 degrees.
- While the mushrooms cook cut the steak into thin strips and lightly coat with the corn starch. In a hot large wok fry the beef in half the groundnut oil for 2 – 3 minutes adding the chilli, ginger, half the soy sauce and the minced garlic clove. Once the beef is coloured all over remove and place in a bowl and cover. Clean the wok.
- When the portobello mushrooms have finished cooking remove from the oven and add 2tsp of the sesame oil and mix the mushrooms around in the juices and the oil and let stand.
- Cut the mushrooms so they are all similar sizes so they cook evenly. Heat the wok up again to a high heat and fry off the veg. After two minutes add in the soy and rice wine vinegar and fry for another two minutes then add in all the beef and all the juices. Add the portobello mushrooms and heat through for a few more minutes.
- Sprinkle with some dry fried sesame seeds.
- This makes a nice meal on its own but serve with rice or noodles if hungry.
Tip :
- Serve on a bed of fried noodles, a runny fried egg and some chilli sauce.
- Use any kind mushrooms you want, your favourite ones and add as many as you want.
