- 500g Jersey royal potatoes (Or any other new potatoes)
- 1 tbsp grated parmesan cheese
- 2 tbsp parsley
- Sea salt
Boil the potatoes whole until cooked, around 15-20 minutes. Then lay the potatoes on a board or a tray to air dry and cool down. Once the potatoes are at room temperature cut them in half. Heat a deep fat fryer to 150 degrees and cook the potatoes for around 8 minutes they should not colour too much. Remove from the oil and heat the fryer to 180/190 degrees, cook the potatoes in the hot oil for a further 3-4 minutes and they will now take on colour. The potatoes should have a very crisp outter, if not return to the oil but try not to over cook them. Leave them to drain for 30 seconds, place in a bowl and sprinkle with parsley, sea salt and the cheese.
Tip :
